If you know me, you know that I’m a huge fan of brunch. (Even my wedding was brunch!) This dish was actually inspired by two dishes I tried while out feasting with my husband. One was a broiled grapefruit made with palm sugar, and the other with cane sugar and berries.
The way the sugar caramelizes and melts into the flesh of the grapefruit makes it absolutely delicious… Seriously, even if you hate grapefruit, you should give this a chance!
With the recipe below, I only made one grapefruit. However, if you wanted to do this for a big brunch party or for a dessert, you could easily line a baking sheet with parchment paper and set eight or so grapefruit halves on each pan. It takes hardly any ingredients or time, and is a dish that will surely impress. The natural sweetness and flavors shine through, which makes this taste like you have been in the kitchen for hours.
Let’s not forget that grapefruits are packed with immune boosting vitamin c and lycopene, and each prepared grapefruit half has less than 100 calories!

Broiled Brown Sugar & Vanilla Grapefruit
1 Large Grapefruit
2 Tbs. Brown Sugar
1/4 Tsp. Ground Vanilla Bean
1) Wash your grapefruit and cut off a small portion from the top and bottom so it can lie flat. Place the grapefruit halves in a pan or on a rimmed baking sheet lined with parchment paper.
2)Using a knife, carefully cut around the circumference of the fruit and then cut segments. This will help the pieces come out easier after being broiled.
3) In a small bowl, combine the brown sugar and vanilla bean flecks. ( I use the Tahitian Vanilla Bean from Williams-Sonoma). Divide the mixture evenly to the top of each grape fruit half and spread. The back of a spoon works nicely for this part, and don;t forget to give the mixture a quick sniff because the vanilla and sugar combo smells heavenlyyyyy. Mmm.
4) Place your pan or baking sheet on the top rack of the oven. Turn your broiler on.
5) Bake for 4-5 minutes or until the sugar on top has carmelized. Watch out! The broiler carmelizes quickly! You may want to stay in the kitchen until it’s done.
